Cheesy Mexican Enchiladas!



We love Mexican food in our house.  Easy to fix ahead of time and tummy filling and satisfying!
This is my version of Chicken Cheese Enchiladas, its nothing earth shattering but its always good and the family loves it.  We usually make some fresh guacamole and spanish rice to have with it.

You can add and subtract ingredients according to your likes & tastebuds!


Ingredients:
-Chicken cut into strips
(I usually cook chicken breasts and cut up or if I'm low on time I buy chicken strips by Perdue)
-Salsa
-Sour Cream
-1/2 large onion diced
-Shredded cheese of your choice
-Corn
-Black Beans
-Jalapeno peppers or other peppers
-Large soft tortilla shells

**Cut calories by using skim cheese and reduced fat sour cream but these aren't high in fat or calories.  There are no creamy sauces to add fat grams and there is enough flavor to satisfy everyone!**


I set up everything assembly line on my island, makes it easy to fix these up in no time.
I spread a spoonful of Sour Cream in the middle of a tortilla and then place on all the other ingredients.  I buy seasoned black beans in a bag and they are especially nummy.  Finish it up by sprinkling cheese on top and then fold up well.

This is mine, no peppers...I can't eat any peppers..but the others have lots :)


I place a bit of salsa in the bottom of my greased pan and spread it around.
Then I sprinkle more cheese on top...cover with foil and cook at 375 degs for 45 mins.
I make these early and put in fridge so I can stick them in the oven after football practice and school.
Make extras to heat up for lunches too!  Mmmmm Good!



Hot out of the oven...ready to go...YUM!
